Serina biscuits are one of the easiest kinds to bake. You need neither irons nor tins, just two hands and a baking tray. If you let the grandchildren roll the balls, they will not be the same size, and that does not matter at all.
Black Month pack What you need
The recipe makes about 40 biscuits.
- 300 g plain flour
- 150 g sugar
- 1 tsp baking powder
- 2 tsp vanilla sugar
- 200 g cold butter
- 1 egg for the dough
- 1 egg for brushing
- Pearl sugar and about 50 g chopped almonds
How to make it
- Mix the flour, sugar, baking powder and vanilla sugar in a bowl.
- Cut the butter into cubes, and rub it into the flour with your fingers.
- Stir in one egg, and quickly bring the dough together with your hands.
- Wrap the dough, and leave it in the fridge for at least 30 minutes.
- Heat the oven to 180 °C, and line two baking trays with baking paper.
- Roll balls the size of a walnut, and space them well apart.
- Press the balls flat with a fork or the base of a glass.
- Brush with beaten egg, and sprinkle with pearl sugar and almonds.
- Bake in the middle of the oven for 10 to 12 minutes, until the edges are pale gold.
Three tips for fine biscuits
- Keep the butter cold: If the dough softens on the worktop, put it back in the fridge for a while.
- Do not knead: The dough should only be brought together. Too much kneading gives hard biscuits.
- Watch them towards the end: The biscuits go quickly from pale to too dark, so check them a couple of minutes before the time is up.
How to store Serina biscuits
Let the biscuits cool completely on a wire rack. Put them in an airtight tin with baking paper between the layers, and keep the tin somewhere cool. They are then good for about two weeks. Butter biscuits are best while fresh, so bake them a little later than the gingerbread biscuits, or freeze them.
They come to no harm in the freezer. Take them out the day before you serve them.

Frequently asked questions
Can I swap the butter for margarine?
Yes, but the flavour will not be the same. Butter is what you taste most in these biscuits.
Do I have to put almonds on top?
No. Pearl sugar on its own is also classic, and it is a good choice if someone cannot eat nuts.
Can the dough be made the day before?
Yes. Wrap it well, and leave it in the fridge overnight. Take it out a little before you start rolling.
Can Serina biscuits be frozen?
Yes, both the dough and the finished biscuits. Put the biscuits in an airtight tin with baking paper between the layers.
