Can You Store Bread in the Fridge? Why It Goes Dry

"Put the bread in the fridge and it will keep longer." The advice sounds sensible: the fridge saves almost everything else. But for bread the opposite is true. At fridge temperature bread goes stale faster than it does on the worktop. Here is the explanation, and what to do instead.

Short answer: No, bread should not be stored in the fridge. At around 4 °C the starch crystallises fastest, and the crumb turns dry and crumbly, often several times faster than at room temperature. Keep the bread on the worktop in something that breathes, and freeze what you cannot eat in time.

What happens to bread in the fridge?

When bread is baked, the starch in the flour takes up water and turns soft and elastic. That is what gives the crumb its moisture. As soon as the bread has cooled, a slow process begins in the opposite direction: the starch gradually reorganises into firm crystals and releases the water at the same time. The process is called retrogradation, and it is this, not evaporation, that makes bread go stale.

This is also why wrapping the bread airtight before you chill it does not help: the crumb turns hard even in a sealed box, because the water does not leave the bread. It becomes locked inside the starch crystals, where you no longer sense it as moisture.

Why it happens fastest at 4 °C

Retrogradation does not run at the same speed at every temperature. It is fastest in the range just above freezing, which is exactly where the fridge sits, around 4 °C. At room temperature the process is considerably slower, and in the freezer it almost stops entirely, because the water freezes to ice.

That is why bakers call the fridge bread's worst enemy: a loaf that would stay soft for several days on the worktop can feel dry and stale the very next day in the fridge.

Are there exceptions? Yes, two honest ones

A very warm, humid kitchen. There, mould is often a bigger threat than dryness, and the fridge can be a deliberate trade-off: you sacrifice moisture for a few extra days without mould.
