“Put bread in the fridge and it will last longer.” That can make sense in a warm, humid kitchen, but bread needs protection from drying out. An uncovered loaf can lose moisture quickly, while refrigeration also speeds up changes in its starch. Here is how to separate those two effects and choose the right storage.
What happens to bread in the fridge?
Two processes are often confused. One is drying: exposed bread loses moisture to the surrounding air. The other is retrogradation: starch in the crumb gradually reorganises into a firmer structure as bread ages. This helps explain why bread goes hard, and it can happen even when the bread is wrapped.
Packaging helps with moisture loss. A bag that lets some moisture escape while slowing evaporation can protect the loaf from drying. It does not remove the effect of temperature on the starch, so wrapped bread can still become firmer in the fridge.
Why does bread firm up quickly around 4 °C?
Retrogradation does not happen at the same speed at every temperature. It generally proceeds faster at refrigerator temperatures, around 4 °C, than at room temperature. Freezing slows the changes considerably, although frozen storage does not preserve quality indefinitely.
With an uncovered loaf, moisture loss adds to the change in the starch. Bread may therefore feel dry and stale sooner in the fridge than on the worktop. The speed depends on the recipe, packaging and storage conditions, rather than a fixed one-day deadline.

When can the fridge be a useful choice?
A warm, humid kitchen. Mould may develop quickly in these conditions. Refrigeration can slow mould growth, but the crumb may still firm up. Keep the bread wrapped and check it before eating. Freezing portions is another option.
When the worktop is full. Baking day, guests or limited space may make short-term refrigeration practical. Put the fully cooled bread in its bag. The bag tolerates the cold, but it does not make fridge storage identical to room temperature.
Sliced shop-bought sandwich bread. Some recipes contain ingredients that slow mould or staling. Follow the storage instructions on the pack. Different breads respond differently, so a result for one loaf is not a guarantee for another.

4Refresh bread that has become dry
Lightly dampen the crust and warm the unwrapped loaf for 5 to 10 minutes at 200 °C. Heat can partly reverse firming and soften the crumb for a short time. Eat it the same day, and never use this method to rescue mouldy bread.
