You bake a loaf on Sunday. On Monday it's perfect. On Tuesday it has green-grey spots. Why does homemade bread go mouldy so quickly, when shop-bought bread can sit for a week? The answer comes down to three factors you can actually control: moisture, temperature and storage.

Mould needs three things

Mould on bread isn't bad luck. It only grows when three conditions are met at the same time:

    The mould needs a damp surface to sprout on. A dry crust slows it down considerably.

There's nothing you can do about the spores. But the moisture, and partly the temperature, you control yourself, and that's where storage decides everything.

What is mould, really?

Mould is a living organism in the fungus family. A spore that lands on a damp bread surface sprouts into thin threads that grow inwards through the loaf, long before you see anything. The coloured spots you eventually notice are spore heads; beneath them lies an invisible root network deep inside the crumb.

Why factory bread doesn't go mouldy as quickly

How to prevent mould

    Let it rest on a rack until it's at room temperature, ideally for an hour or so. Warm bread in a closed bag means condensation, and condensation means mould.

What do you do with bread that already has mould?

Throw away the whole loaf. It's tempting to cut off the spot and eat the rest, but it isn't safe.
