Short answer: A homemade white loaf keeps best in the fridge, in a Bivoks™ bread bag. How long depends on the bread and the fridge, so we don't give a fixed number. In the freezer it keeps good quality for 2 to 3 months. In a plastic bag on the worktop, count on 2 to 3 days, and in a paper bag about a day.

The figures are a guide. A warm kitchen shortens them.

Why does white bread dry faster?

  • Fine flour: White flour binds less water than rye and wholemeal flour.
  • Airy crumb: There is a lot of air in the loaf, so moisture leaves faster.
  • Thin crust: A thin crust protects the crumb less well than a thick one.

How to store a white loaf

  1. Let the loaf cool completely before you put it away.
  2. Put it whole in the bread bag, close with the clip and put the bag in the fridge.
  3. Freeze what you cannot finish, preferably in slices. The bag handles the freezer, so it can go in there too.

Left bare in the fridge, the loaf dries out in a day. The air does that, and it does not reach inside the bag. After the fridge, the freezer is the next choice, and then the worktop. More in fridge, freezer or worktop.

When the loaf has gone dry

A dry loaf is not wasted. Toast, French toast and croutons are just the place for that dry slice. More advice in reviving dry bread.

Frequently asked questions

Can white bread go in the fridge?

Yes, in the bag. Left bare, it dries out.

Can you freeze white bread?

Yes. Slice it first, so you can take out exactly what you need. See how long bread can stay in the freezer.

How long does bought white bread keep?

Follow the date on the bag. Whatever you cannot finish, you can freeze.

Does wholemeal bread keep longer than white bread?

Yes, as a rule. Coarse flour and rye bind more water, so the crumb dries more slowly.

Soft bread for longer

The Bivoks™ bread bag lets the loaf sit in the fridge without drying out.
