How to keep wholegrain and rye bread moist for longer

Wholegrain and rye bread are heavier, wetter and denser than white bread, and that is good news for how long they last. Stored properly, a coarse loaf stays moist for a long time. Stored badly, it makes no difference how moist it was when it came out of the oven.

Short answer: Store the wholegrain loaf whole, at room temperature, in a bag that breathes. Cut from one end and stand the loaf on its cut face. Do not use the fridge, and freeze slices if the bread needs to last more than a week or so.

Why coarse breads keep for longer

There are three reasons, and all of them work in your favour.

More water in the dough. Coarse doughs are usually baked wetter than fine wheat doughs, and more water in the crumb means a longer road to dry bread.

The rye flour. Rye binds water better than wheat and releases it more slowly. That is why a good rye loaf can still taste moist once the white loaf from the same day has gone dry.

The cut face is the bread's open door

The crust protects the crumb from drying out. Every time you cut, you open a door in that protection, and that door should be as small as possible.

So always cut from the same end, and stand the bread on its cut face against the base of the bag. And do not slice the whole loaf in advance: slices dry out many times faster than a whole loaf. A cutting board with a small lip makes the routine easy: the bread stands steady on its cut face between meals.

    Dense, coarse loaves hold their heat for hours. Rye bread also benefits from resting: the crumb sets, and the loaf can be cut into thin, whole slices the next day.

The baking tip for even moister wholegrain bread

If you want to boost shelf life while still at the mixing bowl, try scalding: pour boiling water over part of the coarse flour or the whole grains the evening before, and leave it covered until baking. The scalded flour binds far more water than dry flour, and all that water ends up as moisture in the crumb.
