The plastic bag gets used because it is always in the drawer. It keeps bread soft, but it takes the crust. Here is how long your bread lasts, and when a plastic bag really is a good choice.
Black Month pack How long the bread lasts
| How the bread is stored | Lasts |
|---|---|
| Home-baked, in a plastic bag on the worktop | 2 to 3 days |
| Shop-bought, in the bag it came in | See the date on the bag |
| Airtight plastic bag in the freezer | 2 to 3 months |
| Bivoks™ bread bag in the fridge | Depends on the bread and the fridge |
These figures are a guide. Bread type and temperature play a part.
Why the crust goes soft
A fresh loaf gives off moisture for many hours. Plastic does not let that moisture out, so it stays around the bread. The crust then goes from crisp to chewy. On white sandwich bread you hardly notice. On sourdough and wholegrain loaves with a thick crust, you notice straight away.
When a plastic bag is a good choice
- Sliced shop-bought bread: It is soft to begin with and is fine in the bag it came in.
- The freezer: A tight bag with little air works well. Our bread bag can also go in the freezer, so you don't need a new bag each time.
How to replace the plastic bag
- Let the bread cool completely on a rack, 30 to 60 minutes.
- Put it in the bread bag, fold the top down and fit the clip.
- Put the bag in the fridge. The dry air does not reach the bread.
- Freeze what you won't eat in time, in the same bag.

Frequently asked questions
Can I put warm bread in a plastic bag?
No. Let the bread cool completely first, or the steam will collect inside the bag.
Does bread last longer in a plastic bag in the fridge?
The plastic stops the dry air, so the bread dries out more slowly. The crust still goes soft.
Can bread be frozen in a plastic bag?
Yes, in a tight bag with as little air as possible. It then keeps its quality for 2 to 3 months.
How long does bread last in a beeswax bag?
In the fridge it depends on the bread and the fridge, so we don't give a fixed number. On the worktop the bread stays fresh for 7 to 10 days. Whatever you won't eat in time, freeze in the same bag.
