How we tested

One bag, one loaf at a time: a round sourdough boule of about 800 g. Same recipe, same kitchen at 20-21 °C. An identical loaf sat in a plastic bag alongside.

Day 1: right after cooling

Both loaves are alike: crisp crust, soft crumb.

Day 2-3

Here they start to differ. Condensation has made the crust in the plastic bag clammy and tough, while the loaf in the beeswax bag still has a crisp crust and soft crumb.

Day 4-7

The plastic-bag loaf smells fermented, and on day 6 the first mould spots appear. The beeswax-bag loaf is still perfectly edible, a little firmer, but toasted it is hard to tell from fresh.

Day 8-10

The plastic-bag loaf has been thrown out. The beeswax-bag loaf is past its best but usable for toast; on day 10 we stop, that is the outer limit, not the norm.

Practical tips that extend shelf life

The bag does most of the work, but a few simple habits help:

    Ideally 2-3 hours on a rack. A lukewarm loaf still gives off vapour.
