Short answer: Yes, bun dough can be frozen. Shape the buns after the first rise, freeze them on a tray, and put them in a tight bag or a tub. Thaw them overnight in the fridge, let them prove, and bake as usual. The dough is at its best within about 1 month.

If you are freezing baked buns, the method is in freezing buns, pastries and rolls.

How to freeze bun dough

  1. Make the dough as usual and let it rise to double the size.
  2. Shape the buns.
  3. Put them on a tray lined with baking paper, a little apart, and put the tray straight in the freezer.
  4. Once the buns are hard, put them in a tight bag or a tub with a lid.
  5. Write the date on it, so you know how long they have been there.

How to thaw and bake

  1. Put as many buns as you need on a tray with baking paper, well spaced.
  2. Cover and let them thaw overnight in the fridge.
  3. Leave them on the worktop until almost doubled. This often takes 1 to 2 hours.
  4. Brush with egg and bake as the recipe says.

Three things worth doing

  • Fillings: Raisins, chocolate and cinnamon freeze well. Add custard after thawing.
  • Icing: This goes on after baking.
  • Time: The final rise takes longer than you think. Cold buns need time to wake up.

Once the buns are baked

Let the buns cool completely. Put them in the bread bag and put the bag in the fridge. Freeze what you won't eat in time, in the same bag. Use a tight bag or a tub for raw dough. The bread bag is for finished baking.

Frequently asked questions

Can bun dough be frozen after the first rise?

Yes, that is the best moment. Shape the buns first, so they are ready to thaw.

How long can bun dough stay in the freezer?

About 1 month gives the best result. After that the yeast rises less well.

Why won't the thawed buns rise?

Usually they have had too little time on the worktop. Give them longer in a warm place.

Can I freeze saffron bun dough?

Yes, in the same way. Shape the saffron buns after the first rise and freeze them on a tray.
