These figures are a guide and apply to homemade dough.

How to wrap the dough

  1. Shape the dough into a thick log or a flat slab. Flat dough chills faster and thaws more evenly.
  2. Wrap it tightly, so the air does not reach the edges.
  3. Put it in the fridge at least overnight before you roll it out.
  4. Write the date on the pack.

In the fridge, the dough can also go in a food container. With less air around it, the edges dry out more slowly.

How to freeze and thaw

Divide the dough into portions before you freeze it. Then you do not have to thaw it all. Wrap each portion tightly, and put it in the freezer. Thaw the dough in the fridge the day before you bake.

Is the dough still good?

  • Dry edges: Cut them off, the rest is fine.
  • Hard dough: Leave it on the worktop for a little while and knead it soft with your hands.
  • Rancid or sour smell: Throw the dough away.

Once the biscuits are baked

Finished gingerbread biscuits go in an airtight tin, where they stay crisp for a long time. The whole method is in storing gingerbread biscuits.

Frequently asked questions

How long can gingerbread dough stay in the fridge?

About a week if it is well wrapped. If you need more time, put it in the freezer.

Can gingerbread dough be frozen?

Yes, for about 2 months. Wrap it tightly, and thaw it in the fridge the day before you bake.

Why does the dough need to rest?

Cold dough is firm and easy to roll. The rest also gives the spices time to settle.

Why does the dough crack when I roll it?

It is too cold or too dry. Leave it on the worktop for a bit and knead it supple with your hands.
