Vaniljekranser recipe: Danish vanilla rings for Christmas

Vokshus food container 1,600 ml with lid and pump

Vaniljekranser (Danish vanilla rings) are Denmark's answer to Serina biscuits: buttery, crisp and hard to resist. The key words are real vanilla. If you buy a vanilla pod for these biscuits, you will notice the difference at once.

Short answer: Beat 200 g soft butter with 125 g sugar and the seeds from half a vanilla pod. Mix in 1 egg, 50 g chopped almonds and 300 g plain flour. Pipe small rings on baking paper, and bake at 190 °C for 7 to 9 minutes, until the edges are golden.

What you need

The recipe makes about 50 rings.

  • 200 g soft butter
  • 125 g sugar
  • ½ vanilla pod
  • 1 egg
  • 50 g finely chopped almonds
  • 300 g plain flour

How to make it

  1. Heat the oven to 190 °C, and line the baking trays with baking paper.
  2. Split the vanilla pod lengthwise, and scrape out the seeds.
  3. Beat the butter, sugar and vanilla seeds until pale and airy.
  4. Stir in the egg and almonds, and mix in the flour.
  5. Put the dough in a strong piping bag with a star nozzle.
  6. Pipe rings of about 5 cm with a little space between them.
  7. Bake in the middle of the oven for 7 to 9 minutes, until the edges are golden.
  8. Let the rings cool on the tray. They are soft while warm.

Piping bag or mincer?

The dough is firm, and a thin bag can split. The tradition in Denmark is to press the dough through a mincer with a star plate, and then shape rings from the strips. If you do not have one, you can roll the dough into ropes and make a pattern with a fork. The flavour is the same.

How to store Vaniljekranser

Cold rings go in an airtight tin, layer on layer with baking paper in between. That keeps them crisp for about two weeks in a cool place. If you make them well ahead, you can freeze them. Put the tin on the worktop the day before you serve them.

Frequently asked questions

Can I use vanilla sugar?

Yes. Use 2 tsp vanilla sugar. The flavour is a little less distinct.

Why do the rings spread?

The butter is too soft, or the tray is warm. Let the piped rings stand somewhere cold for a while before they go in the oven.

Can the dough be frozen?

Yes. Thaw it in the fridge, and let it stand on the worktop for a bit before you pipe.

What is the difference between Vaniljekranser and Serina biscuits?

Vaniljekranser are piped and have almonds in the dough. Serina biscuits are rolled into balls and topped with pearl sugar.

Butter biscuits in a tin of their own

The Vaniljekranser get their own tin, and you will find them fast on the shelf.
