Everything we know about storing bread, gathered on one page. Here you will find the basic principles, advice for every type of bread, and links onward to the in-depth articles when you want the full explanation. Do bookmark the page: it is updated whenever we learn something new.

Short answer: Bread keeps best at room temperature on the worktop, in something that breathes and slows the drying at the same time. Never in the fridge: bread goes stale faster there. If the loaf has to last longer than a week or so, the freezer is the right place.

The three basic rules

1. The worktop is where bread belongs. At room temperature the crumb keeps its moisture and the crust keeps its character. In a breathable bag with a wax coating, bread stays fresh for 7 to 10 days. The mistakes people make most often are in common bread storage mistakes.

2. Never in the fridge. Fridge temperature makes the starch in bread firm up many times faster than room temperature does. The full explanation is in bread in the fridge: why it is a bad idea.

3. The freezer handles long-term storage. Wrapped properly, bread keeps good quality for two to three months. See how to freeze bread properly, and frozen bread straight into the oven for when it comes out again.

How long does bread keep?

Fresh homemade bread keeps for 2 to 3 days in a plastic bag, about a day in a paper bag, and 7 to 10 days in a beeswax-lined bag of cotton and linen. The numbers for each type of bread are in how long bread keeps: the table and in how long homemade bread stays fresh.

Advice for each type of bread

When things go wrong

Dry bread is rescued with water and a hot oven: the method is in how to freshen up dry bread, and why it happens in why bread goes hard and why bread crumbles. Mould is another matter: read why bread goes mouldy and is it dangerous to eat mouldy bread before you taste it. And if you throw away more than you care to admit, you are in good company: the Bread Waste Report 2026 shows the figures for Norway, and how to avoid bread waste has the tricks.

The kit: bag, bin or something else?

The choice is between a bread bin, a plastic bag, a paper bag and a fabric bag with wax. We have compared them in bread bin or bread bag, paper bags for bread, fabric bag, linen bag or beeswax bag and beeswax against plastic. If you are new to beeswax bags, start with what a beeswax bread bag is, how to choose a bread bag and tests and experiences. Your bag lasts for years with simple care: how to wash it, and how to renew the wax.

Special situations

Bread in summer, bread at the cabin and on the trail, and the routine where you bake once and eat all week. If you bake yourself, you may also want looking after a sourdough starter and the recipe for a rustic boule.

Christmas bread and Christmas baking

December has rules of its own: the Christmas breads and how long they keep, Christmas baking in advance, the right tin for each Christmas biscuit and Christmas baking and Christmas biscuits: storage. Cakes the rest of the year: cake without plastic and marzipan cake and cream cake. And for the baking itself: freezing buns and pastries, storing pastries and croissants, feeding a sourdough starter and fresh yeast: how long it keeps.

Frequently asked questions

What is the best way to store bread?
At room temperature on the worktop, in a bag that breathes and slows the drying at the same time. That keeps the bread fresh for 7 to 10 days. A plastic bag gives you mould, a paper bag gives you dry bread, and the fridge makes bread stale within a day.
Should bread be stored in the fridge?
No. Fridge temperature ages bread faster than room temperature does. Use the worktop for the bread you eat this week and the freezer for the rest.
How long does bread keep in the freezer?
Two to three months at good quality, wrapped properly. Write the date on whatever you freeze, and thaw it on the worktop or in the oven.
