Short answer: Stir together 250 g wholemeal flour, 250 g plain flour, 50 g sunflower seeds, 2 g dried yeast, 10 g salt, 1 tbsp honey and 400 ml cold water. Cover, and leave the dough in the fridge overnight. Put 12 spoonfuls on a tray, let them rest for 20 minutes and bake at 230 °C for 15 to 18 minutes.

What you need

The recipe makes 12 rolls.

  • 250 g wholemeal flour, coarse
  • 250 g plain flour
  • 50 g sunflower seeds
  • 2 g dried yeast, about ½ tsp
  • 10 g salt
  • 1 tbsp honey
  • 400 ml cold water

How to make it

  1. Mix all the dry ingredients in a large bowl.
  2. Stir in the honey and water with a wooden spoon, until everything is moistened. There is no need to knead.
  3. Cover the bowl, and put it in the fridge for 10 to 12 hours.
  4. Heat the oven to 230 °C the next morning, and line a baking tray with baking paper.
  5. Put 12 spoonfuls on the tray with two wet spoons.
  6. Let them rest for about 20 minutes, while the oven heats up.
  7. Bake in the middle of the oven for 15 to 18 minutes, until golden brown.
  8. Let the rolls breathe on a wire rack for 5 minutes.

How to vary them

  • Oats: Swap 50 g of the flour for rolled oats.
  • Linseed: Swap the sunflower seeds for linseed or pumpkin seeds.
  • A softer crumb: Swap 100 ml of the water for milk or buttermilk.

Sticky dough is right

You should not be able to shape this dough with your hands. The high water content is what gives the moist crumb. Wet spoons make the job easy. Spoonfuls that spread a little turn out flat, but no worse.

How they stay fresh

Rolls dry out faster than large loaves. Whatever you do not eat for breakfast goes in the bread bag once it is cold. Keep the bag in the fridge. If you want fresh rolls all week, freeze them the same day and put them straight in the oven at 200 °C for 8 to 12 minutes. There is more on this in how to freeze buns and bread rolls.

Frequently asked questions

Can the dough stand for longer than overnight?

Yes, for up to two days in the fridge. The flavour turns a little more sour.

Can I use fresh yeast?

Yes. Use 8 g, stirred into the cold water.

Why did the rolls turn out flat?

The dough was too wet, or it stood for too long. Use 350 ml water next time.

Can I shape them the evening before?

No, this dough is too wet. Put the spoonfuls on the tray in the morning.
