Carrot in the dough gives bread a mild sweetness, a warm colour and a moist crumb. It is an easy way to get more vegetables into your packed lunch. The recipe makes two loaves.
Black Month pack Ingredients for two loaves
- 300 g carrot, about 4
- 600 ml lukewarm water
- 25 g fresh yeast
- 3 tsp salt
- 1 tbsp rapeseed oil
- 400 g wholemeal flour
- 600 g plain flour
How to bake carrot bread
- 1Grate the carrots
Peel the carrots and grate them on the coarse side of the grater.
- 2Knead the dough
Stir the yeast into the water. Add carrot, salt, oil and flour, and knead for 10 minutes. The carrot releases liquid, so wait with any extra flour until the dough is kneaded.
- 3Let it rise twice
Let it rise, covered, for about 1 hour. Divide the dough in two, put it in greased tins and let it rise for about 30 minutes.
- 4Bake
Bake at 200 °C for about 40 minutes. Cool on a rack before slicing.
How to store carrot bread
A moist bread with vegetables in the dough is happiest somewhere cool. So keep it in a bread bag in the fridge. Whatever you won't eat in time, freeze in the same bag. See also how long homemade bread stays fresh.
