How to store bread: keep it fresh and freeze the rest

Short answer: Bread keeps best at room temperature on the worktop, in something that breathes and slows the drying at the same time. The bag can go in the fridge when needed, although the crumb may still firm up faster there. If the loaf has to last longer than a week or so, the freezer is the right place.

The three basic rules

1. The worktop is where bread belongs. At room temperature the crumb keeps its moisture and the crust keeps its character. In a breathable bag with a wax coating, bread stays fresh for 7 to 10 days. The mistakes people make most often are in common bread storage mistakes.

How long does bread keep?
