Cover the cut surface
A cake dries where it has been cut. Cover that exposed surface closely with suitable food wrapping paper, then keep the cake under a cake dome or a large upturned bowl in the fridge. A beeswax wrap can help cover a dish, but avoid pressing reusable fabric into cream or sticky fillings. Cling film directly on marzipan can mark the surface and trap condensation.
Can marzipan cake be frozen?
Many marzipan cakes freeze well: the sponge and coating often tolerate freezing, although cream texture can change. Freeze the cake uncovered for about an hour until the surface is firm, then wrap it closely. Thaw slowly in the fridge overnight while still wrapped, so condensation collects on the wrapping rather than the marzipan.
