Beeswax wraps can go in the freezer, and they are an easy way to skip the cling film around cheese and a few slices of bread. But the cold does something to the wax: it stiffens and turns brittle. With two simple rules the sheet copes just fine.

Short answer: Yes, beeswax wraps can be used in the freezer for short spells, for example around cheese, a knob of butter or a few slices of bread. The wax goes hard in the cold, so an ice-cold sheet should never be folded or bent. Let the parcel come up to room temperature on the worktop first, and the sheet softens on its own.

Why the wax turns brittle in the cold

Beeswax softens as early as 35 to 40 °C and melts at around 62 to 65 °C. Going the other way it gets harder: in the freezer the wax layer sets completely, and a sheet that normally shapes itself to the warmth of your hands turns as stiff as card.

Bend an ice-cold sheet and the wax does not follow. It cracks. The cracks are small and easy to miss, but wherever the wax has cracked, the grip gets weaker. So the main rule is simple: shape the sheet before the parcel goes into the freezer, and only unwrap it once the sheet is soft again.

How to freeze with beeswax wraps

    Cool the food completely first

    Lukewarm food gives condensation inside the parcel, and damp is what the sheet likes least.

    Shape the sheet while it is at room temperature

    Lay the food on the sheet, fold the edges in and press them together with your palms. The warmth of your hands is enough for the wax to grip.

    Label the parcel with the date

    Do not write on the sheet itself. Slip a note in beside the parcel instead.

    Lay the parcel flat and free

    Do not wedge it between heavy things. Hard pressure against a stiff parcel breaks the wax.

    10 to 20 minutes is usually enough. If the sheet feels soft, it is safe to fold open.

What not to freeze in a sheet

Beeswax wraps are not airtight. On the worktop that is an advantage, in the freezer a drawback. Air against the food over time gives freezer burn: dry, white patches that ruin both flavour and texture. If something has to sit for longer than a month, use a sealed box or a freezer bag.

Liquid is the other limit. Water expands as it freezes, and the ice presses on the wax layer from the inside. Soup, stew and marinated food do not belong in a sheet. Raw meat and raw fish have no place there either: afterwards the wrapping has to be washed hot, and hot water melts the wax out of the fabric. The bread bag does not belong in the freezer

The beeswax bread bag is a different matter. It is sewn in cotton and linen, coated with beeswax, and closes with a clip. The bag is made for the worktop, not for the cold: it is not airtight, and a whole loaf in the freezer needs exactly that. Use a freezer bag for the loaf, and the bread bag once it has thawed. There is one exception. If the bag has picked up a smell you cannot get rid of, it can sit dry in the freezer overnight. Cold on its own does not harm the wax. It is folding cold fabric that does the damage.

After the freezer: dry, air and check the grip

When the sheet is soft again, there is often a little condensation on the outside. Wipe it off with a clean cloth, or rinse it in cold water with a little mild soap. Let the sheet air dry completely before you put it back in the drawer.

If the sheet grips less well than before, it is not ruined. Lay it between two sheets of baking paper and give it 80 to 90 °C for about 2 minutes in the oven.
