Not all breads age the same way. Sourdough keeps longest: the acids from the natural fermentation hold mould growth back, and the moist crumb dries more slowly. White loaves and rolls, with finer flour and a thinner crust, dry out fastest.

Rolls are best on the day they are baked and should go straight into the freezer. For whole loaves it is the storage method that makes the big difference.

Why does the plastic bag fail?
Plastic is airtight. Bread keeps giving off moisture long after baking, and in a sealed bag that moisture condenses on the inside: the crust turns rubbery as soon as the next morning, and the warm, damp conditions are perfect for mould spores.

Push the halves back together, cut face against cut face. Then the crust protects the crumb from drying out on both sides.

3Store at room temperature
Never in the refrigerator. Room temperature keeps the flavour and the texture best.

4Freeze what you will not get through
Preferably in slices, within a week or so. Then you take out exactly what you need.

A few drops of water on the crust and five minutes in a hot oven work wonders towards the end of the week.
