French toast: a simple recipe for stale bread

Homemade bread and a Vokshus bread bag on the worktop

French toast is an old way of turning dry bread into something good. The bread soaks up egg and milk, gets a crisp surface and stays soft inside. All you need is a few ingredients and a frying pan.

Short answer: Whisk 3 eggs with 3 dl of milk, 1 tbsp of sugar and 1 tsp of cinnamon. Dip 8 slices of dry bread in the mixture, and fry them in butter over a medium heat for 2 to 3 minutes per side.

What you need for 4 people

  • 8 slices of bread, ideally 1 to 2 days old
  • 3 eggs
  • 3 dl milk
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • Butter for frying

How to do it

  1. Whisk egg, milk, sugar and cinnamon in a deep plate.
  2. Put the slices in the mixture for about 1 minute per side. Very dry bread can stay in a little longer.
  3. Melt a little butter in a frying pan over a medium heat.
  4. Fry the slices for 2 to 3 minutes per side, until golden.
  5. Keep the finished slices warm in the oven at 100 °C while you fry the rest.

Which bread is best?

White bread gives the softest result, and wholemeal gives more flavour. Dry bread is best, because it soaks up the liquid without falling apart. Leftover Christmas fruit loaf and other sweet breads work too. Use bread that still smells and looks fine.

What to serve with it

  • Sugar and cinnamon, the classic way
  • Jam and sour cream
  • Fresh berries and a little maple syrup
  • Fried apple with cinnamon

Savoury version for lunch

Leave out the sugar and cinnamon, and add a little salt and pepper. Fry the slices the same way, and add cheese and ham while they are warm.

Less dry bread next time

French toast is a good rescue, but most of your bread you would rather eat as it is. Put it in the bread bag and put the bag in the fridge, and it stays soft for longer.

Frequently asked questions

Why did my French toast turn soggy?

Usually the slices stayed too long in the mixture, or the pan was too cool. Use a medium heat, and let the slices get a good colour.

Can I use fresh bread?

Yes, but then the slices only need a quick dip. Fresh bread soon goes soggy.

Can French toast be frozen?

Yes. Let the slices cool, and freeze them with baking paper in between. Warm them in the toaster or the oven.

Can I make it without egg?

The recipe needs egg to hold together. Try toasting the bread in butter with cinnamon and sugar instead.
