Lomper are soft, thin Norwegian flatbreads made from potato and flour. They need only three ingredients and a little patience with the rolling pin. You don't need a griddle: a large, dry frying pan works fine.
Black Month pack Ingredients for about 12 lomper
- 1 kg floury potatoes
- 1 tsp salt
- About 250 g plain flour, plus a little for rolling
How to make lomper
- 1Boil and mash
Boil the potatoes until tender, peel them and mash until completely smooth while still warm. Let the mash cool completely, ideally overnight.
- 2Knead in the flour
Knead in salt and flour to a supple dough. Use no more flour than the dough needs, or the lomper turn out chewy.
- 3Roll thinly
Divide the dough into about 12 pieces. Roll each piece into a thin, round sheet on a floured counter.
- 4Cook
Cook in a dry, hot pan for about 1 minute on each side, until they get light brown spots. Put the finished lomper under a clean tea towel to keep them soft.
How to keep lomper soft
Lomper dry out quickly because they are so thin. Stack the cold lomper with a layer between them and wrap them in something that breathes. If they need to last more than a couple of days, freeze them and thaw slowly at room temperature. The full routine is in storing lefse, lomper and flatbread.
