A wholemeal loaf for breakfast and packed lunches is the easiest bread to bake at home. This recipe makes two loaves, so you have one for now and one for the freezer.
Black Month pack Ingredients for two loaves
You need two loaf tins of about 1.5 litres.
- 7 dl lukewarm water
- 25 g fresh yeast
- 400 g coarse wholemeal wheat flour
- 100 g wholemeal rye flour
- 3 tsp salt
- 1 tbsp oil
- 500 g white flour
How to bake wholemeal bread
- Stir the yeast into the water.
- Add the wholemeal wheat, wholemeal rye, salt and oil. Stir well, and let it stand for 10 minutes. This lets the coarse flour soak up water.
- Add the white flour a little at a time, and knead for 10 minutes. The dough should be soft and slightly sticky.
- Cover, and let the dough rise for about 1 hour, until it has doubled in size.
- Divide the dough in two, shape the loaves, and place them in greased tins. Let them rise for 30 to 40 minutes.
- Heat the oven to 200 °C, and bake the loaves low in the oven for about 40 minutes.
- Take the loaves out of the tins and tap the bottom gently. A hollow sound means they are done.
- Let the loaves cool completely on a rack.
Four tips for moist bread
- Not too much flour: A slightly sticky dough gives moist bread. Too much flour gives dense bread.
- Cold rise: Use half the yeast and cold water, and leave the dough in the fridge for 8 to 12 hours.
- Swap some flour: Rolled oats or seeds can replace part of the wholemeal flour.
- Wait with the knife: The bread cuts best when it is completely cold.
Two loaves: one now, one in the freezer
Put one loaf in the bread bag and the bag in the fridge. The dry air does not reach inside the bag. Slice the other one and put it in the freezer. See baking bread for the whole week.

Frequently asked questions
Can I use dried yeast?
Yes. Use 7 g dried yeast, and mix it into the flour rather than the water. More in everyday loaf with dried yeast.
Why is my wholemeal bread dense?
Most often too much flour, too little kneading or too short a rise.
Can I bake without a tin?
Yes. Shape two round loaves and place them on a baking sheet with baking paper. Bake as usual.
How long does the wholemeal bread keep?
It depends on the bread and the fridge, so we don't give a fixed number. In the bag it stays soft, and left bare it dries out.

For the everyday loaf
The Bivoks™ bread bag keeps the dry fridge air out, so the bread stays soft.
