Short answer: Yes, ordinary bread with no filling can be refrozen if it is still fresh. What you will notice is that the crumb gets a little drier each round. Bread with cream, cheese or meat should not be refrozen.

When can bread be refrozen?

The breadRefreeze?
Thawed the same day, fresh, no fillingYes
Thawed in the fridge a couple of days ago, still freshYes, but it gets drier
Warmed in the ovenYou can, but it turns dry. Better used for toast
Filled with cream, cheese or meatNo

Why the bread gets drier

When bread freezes, the water in the crumb moves out into ice crystals. When it thaws, not all of that water goes back where it was. One round is barely noticeable. Two rounds are, especially in white bread and baguettes. There is more on this in why bread goes hard.

How to avoid refreezing

  • Freeze in slices: Then you only take out what you will eat.
  • Cut the loaf in two: Then you thaw half a loaf at a time.
  • Thaw in the fridge: The bread thaws in the bag, and the rest can stay there instead of going back in the freezer.

Have to refreeze? Here is how

  1. Do it as early as you can, ideally the same day the bread thawed.
  2. Put the bread in a bag that closes properly, and put on the clip.
  3. Write the date on a note, and eat this bread first.

Frequently asked questions

Is it dangerous to refreeze bread?

Usually not, if it is ordinary bread with no filling that is still fresh. If the bread looks or smells odd, it should not go back in the freezer.

Can buns and rolls be refrozen?

Yes, but they dry out faster than big loaves. They taste best toasted or warmed in the oven afterwards.

How many times can bread be frozen?

Stick to one extra round. After that it is better to make toast or breadcrumbs.
