Vokshus food container 2,800 ml with lid and pump

Krumkaker (rolled wafers) are thin and crisp and fill the whole house with the smell of Christmas. The batter is ready in ten minutes. The rest is calm work at the iron, and it goes faster if there are two of you: one bakes, one rolls.

Short answer: Whisk 3 eggs and 200 g sugar until pale, and stir in 200 g melted butter, 200 g plain flour, 1 tsp cardamom and 100 ml cold water. Let the batter rest for half an hour. Bake thin wafers in the krumkake iron, and roll them around the stick while warm.

What you need

The recipe makes about 40 Krumkaker.

  • 3 eggs
  • 200 g sugar
  • 200 g butter, plus a little extra for the iron
  • 200 g plain flour
  • 1 tsp ground cardamom
  • 100 ml cold water

How to make it

  1. Melt the butter, and let it cool until lukewarm.
  2. Whisk the eggs and sugar to a pale, airy foam.
  3. Stir in the butter, flour, cardamom and water to make a smooth batter.
  4. Let the batter rest for about 30 minutes.
  5. Heat the iron. Brush it with a little butter before the first wafers.
  6. Add about 1 tbsp batter, close the iron and bake until the wafer is pale gold.
  7. Lift the wafer off, and roll it at once around the krumkake stick.
  8. Lay the Krumkaker on a wire rack until they are completely cold.

When the wafers crack

A Krumkake sets in seconds. If it cracks when you roll it, it has been too long in the iron or too long on the worktop. Bake for a little less time, and take one wafer at a time. If the wafers turn thick and soft, you have used too much batter.

How they stay crisp

Krumkaker quickly take up moisture from the kitchen air. Put them in a completely airtight tin as soon as they are cold, and do not let them share a tin with soft biscuits. Then they stay crisp for a couple of weeks, often longer.

If they have still gone chewy, a few minutes in the oven at 150 °C will help. They should be completely cold again when you put them back. There is more on choosing a tin in Christmas biscuit tins.

Krumkaker take up space, and a half-full tin is full of air. In our food container the pump draws out the air, and you can see through the side what is left.

Frequently asked questions

Can Krumkaker be frozen?

Yes. Lay them carefully in a tin with baking paper between the layers, as they break easily. Thaw them with the lid off.

How long before Christmas can I bake Krumkaker?

The end of November is fine, as long as the tin is completely airtight and kept cool.

What can I fill Krumkaker with?

Cream and cloudberries are the classic. Fill them just before serving, or they lose their crispness.

What do I do without a krumkake iron?

Choose another kind. You will find seven kinds that need no special iron in seven kinds of Christmas biscuits.

A container for the crisp biscuits
