Short answer: Mix 500 g flour, 340 g water, yeast, salt and a little oil. Let the dough rise for 1 hour, shape it and put it in a greased 1.5 litre tin. Prove for 30 to 45 minutes and bake at 200 °C for 35 to 40 minutes.

What you need

For 1 loaf in a 1.5 litre tin:

  • 400 g white bread flour
  • 100 g wholemeal flour
  • 340 g lukewarm water
  • 25 g fresh yeast or 7 g dried yeast
  • 10 g salt
  • 1 tbsp oil
  • 1 tbsp honey or syrup

Method

  1. Stir the yeast into the water. If you use dried yeast, mix it into the flour.
  2. Add everything else and knead the dough for about 10 minutes until smooth and supple.
  3. Cover and let the dough rise for about 1 hour, until doubled.
  4. Grease the tin. Press the dough out into a rectangle and roll it up tightly.
  5. Put the dough in the tin with the seam down and prove for 30 to 45 minutes.
  6. Heat the oven to 200 °C. Bake the loaf low in the oven for 35 to 40 minutes.
  7. Take the loaf out of the tin straight away and let it cool completely on a rack.

If it sounds hollow when you tap the base, the loaf is done.

Change it to your taste

  • A heartier loaf: Swap 100 g of white flour for wholemeal, and add a little more water.
  • Seeds: Stir 50 g sunflower seeds or linseeds into the dough.
  • More flavour: Use less yeast and leave the dough in the fridge overnight.
