A dense loaf is disappointing, but the fault is usually easy to fix. The crumb tells you what happened, so cut a slice and take a look before you bake again.
Black Month pack Read the crumb
| What the bread looks like | Likely cause | Next time |
|---|---|---|
| Heavy and dense all through | Too short a rise | Give the dough more time |
| Dry and dense | Too much flour | Keep the dough a little sticky |
| Flat and sunken in the middle | Risen for too long | Bake earlier |
| Sticky crumb | Cut while warm, or baked too short a time | Bake for longer, and let the bread cool completely |
| Wide and low | Too little support during the rise | Shape it tight, use a proofing basket |
The finger test: is the dough ready?
Press a floured finger about 1 cm into the dough.
- Springs back quickly: The dough needs more time.
- Comes back slowly: The dough is ready for the oven.
- Stays as a hole: The dough has risen for too long. Bake it straight away.
Five things that make bread dense
- Too short a rise: The time in the recipe is only a starting point. In a cold kitchen it takes longer.
- Too much flour: Flour on the table ends up in the dough. Use a little, and wet your hands instead.
- Too little kneading: The dough should be supple and stretch without tearing.
- Lots of wholemeal flour: Wholemeal flour gives a heavier loaf. Mix it with white flour, or give the dough a little more liquid.
- Old yeast: Check the date. How to test the yeast is explained in fresh yeast: how long it keeps.
The proofing basket gives the bread support
A wet dough likes to spread out on the tray. In a proofing basket it gets support during the final rise, so it keeps a fine, round shape. Flour the basket well, add the dough and turn it out when the finger test says it is ready.

What can you do with a dense loaf?
If it is baked through, it is perfectly fine to eat. Dense slices are good toasted, and the rest can become breadcrumbs or croutons.
Frequently asked questions
Why is my sourdough bread dense?
Most often the starter is too weak, or the dough rose for too short a time. The starter should bubble well before you bake. See feeding a sourdough starter.
How wet should the dough be?
A little sticky, but it should come away from the bowl after kneading. Wet doughs often give bigger holes.
Does baking it longer help?
No, that does not make a dense loaf lighter. The air has to come during the rise.
Can I rescue the dough before baking?
Yes. If it has not grown enough, give it more time somewhere warm.
