Lebkuchen are soft spiced biscuits with honey, and they want the exact opposite of gingerbread biscuits. Where gingerbread biscuits should stay crisp, Lebkuchen should hold on to their moisture. Here is how.
Black Month pack How long Lebkuchen keep
| Lebkuchen | Keep for |
|---|---|
| Home-baked, in an airtight tin somewhere cool | 3 to 4 weeks |
| Shop-bought, in an unopened pack | See the date on the pack |
| Shop-bought, in an opened pack | Move them to an airtight tin and eat within a couple of weeks |
| In the freezer, without icing | About 2 months |
The times are a guide and depend on the recipe.
How to store Lebkuchen
- Let the biscuits cool completely, and let any icing or chocolate set fully.
- Put them in an airtight tin, with baking paper between the layers.
- Keep the tin for Lebkuchen alone. Crisp biscuits soften next to them, and the spices carry over.
- Keep the tin somewhere cool, dry and dark.
- Let them rest for a few days if you can. Many Lebkuchen turn softer and rounder in flavour.
Why not in the fridge?
The biscuits do not need the fridge, and every time a cold tin is opened, condensation can form on them. A cool pantry or a cold cupboard is better. If you have crisp biscuits as well, the rules for those are in storing gingerbread biscuits.
Have the biscuits turned hard?
Put a piece of apple on a square of baking paper in the tin and close the lid. After a day the biscuits have drawn moisture from the apple. Take the apple out after a day or two.
A container with less air
Air turns Lebkuchen hard. Our food container is transparent, the lid snaps on with two clips and the pump draws out the air. With less air around it, food stays good for longer, and you can see what is left without opening the lid.

Frequently asked questions
Can Lebkuchen be frozen?
Yes, ideally without icing. Thaw them in an airtight tin and decorate them afterwards.
Can Lebkuchen be stored with gingerbread biscuits?
No. Soft biscuits give off moisture, and the crisp ones then lose their snap.
Why did my Lebkuchen turn hard?
Most often the tin is not airtight enough, or it is half full of air. Try the piece of apple.
How dark and cool must they be?
A cool cupboard or a pantry is enough. Avoid the shelf above the stove.
