Step one: cool fully on a rack
A newly baked loaf contains steam that needs to escape. A large loaf may take 2 to 3 hours on a rack: feel the base, which should be cool rather than warm. A tea towel: useful for the first evening
A clean tea towel can protect bread for the evening or during transport, but it allows moisture to escape much like paper. By the following morning, the crumb may be drying. A plastic bag: the opposite limitation
