Banana bread: moist recipe with ripe bananas

Homemade bread and a Vokshus bread bag on the worktop

The bananas in the fruit bowl have turned brown, and nobody wants them. That is exactly when to bake banana bread. The darker the skin, the sweeter and moister the loaf. All you need is a bowl, a fork and a tin.

Short answer: Mash 3 ripe bananas, and stir in 2 eggs, 150 g brown sugar and 100 ml oil. Fold in 250 g plain flour, 2 tsp baking powder and 1 tsp cinnamon. Pour the batter into a greased 1.5 litre tin, and bake at 175 °C for 50 to 60 minutes.

What you need

  • 3 ripe bananas
  • 2 eggs
  • 150 g brown sugar
  • 100 ml neutral oil
  • 250 g plain flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 pinch of salt
  • A little butter for the tin

How to make it

  1. Heat the oven to 175 °C, and grease a loaf tin of about 1.5 litres.
  2. Mash the bananas with a fork in a large bowl.
  3. Stir in the eggs, sugar and oil.
  4. Mix the flour, baking powder, cinnamon and salt, and fold it in. Stir only until the flour has gone.
  5. Pour the batter into the tin.
  6. Bake on the bottom shelf of the oven for 50 to 60 minutes.
  7. Insert a skewer in the middle. If it comes out clean, the loaf is done.
  8. Let the loaf stand in the tin for 10 minutes, and turn it out on a wire rack.

Four good variations

  • Walnuts: Fold in 75 g coarsely chopped walnuts.
  • Chocolate: Fold in 75 g chopped dark chocolate.
  • A heartier loaf: Swap 100 g of the flour for wholemeal flour.
  • Less sweet: Use 100 g sugar if the bananas are completely black.

When the loaf turns sticky

If the middle is sticky, the loaf needs more time. Lay a piece of baking paper over the top if it gets too dark, and keep baking. Banana bread is better the next day, once it has settled, so do not cut it while it is warm.

How to keep the loaf moist

Let the loaf cool completely before you wrap it. Put it in the bread bag, put the clip on and keep the bag in the fridge. That way the dry air in there cannot get at the bread. You can also slice the loaf and freeze the slices. Then you take them out one at a time and toast them.

Can I freeze ripe bananas?

Yes. Freeze them without the skin, and thaw them before you mash them.

Can banana bread be frozen?

Yes. Freeze the whole loaf or slices, and wrap them well.
