A tightly closed container can preserve crispness for several months in dry conditions. Sound crispbread that has merely softened can often be refreshed in the oven.

Why crispbread loses its crunch

Crispbread has had most of its water baked out, which helps it keep. But the dry bread readily absorbs moisture from the air, becoming chewy and dull in flavour. Humid summer weather can speed this up. Low moisture discourages mould, but crispbread is not immune if it gets damp or contaminated. Let the container do the work

A metal tin or glass jar with a close-fitting lid helps keep room moisture out. Store it somewhere dry and cool, away from steam above the cooker. Large round sheets can be broken into quarters to fit, or hung traditionally in a clean, dry room. A fridge is usually unnecessary for plain crispbread; avoiding moisture and condensation matters more.

Refreshing chewy crispbread

If it is simply soft and shows no signs of spoilage, put the pieces in an oven at 150 °C for about 5 minutes, then cool on a rack. This can restore the crunch and also works for some plain biscuits and rusks. Serve promptly or let them cool completely before returning them to a dry, sealed container. Do not seal warm pieces and trap condensation.
